We go from home to office or school -- or both -- and coming home to a meal brimming with comfort ingredients is exactly what the soul cries out for. "Since 9/11, my personal goal has been to make meal time family time," says Tiffany Collins, author of "300 Best Casserole Recipes" (Robert Rose). Collins, who lives in Austin, Texas, says casseroles came into their own in the 1970s. The dishes were quick and easy "but when I looked back at them when researching this book, they had a stick of butter in them. Today, we use a tablespoon of butter or olive oil. It's very interesting to see how we have progressed in our cooking." "It was fun telling my friends I was writing this cookbook, because everyone has a favorite from childhood -- Goulash, tuna noodle casserole, you name it," she says, adding that in the Dakotas, people call casseroles a "hot dish" and in other parts of the
country, they are called "one-dish" meals.The cookbook explores the gamut of casseroles from breakfast to dessert. One of the most interesting desserts is Southern Chocolate Pecan Pie Brownies, a broken frozen pecan pie mixed with chocolate chips, butter and other yummy ingredients. "I came up with the idea after working for Southern Living (magazine) years ago. We were challenged by a vendor who supplied us with frozen pies to see what we could do with them. I thought about adding it to a brownie batter. I played around with it, tweaked it some more and this is what I came up with," Collins says.Collins, who is a nationally certified group fitness instructor, said her book is a combination of casserole recipes with one chapter devoted to "healthy choices." That doesn't mean the others are oozing in fat and calories, only that they are loaded with flavor and, if desired, modifications can be made. For instance, when a recipe calls for a can of evaporated milk, a can of skim evaporated
milk can be used just as well. But, as the pecan pie brownie casserole demonstrates, there is room for treats in our lives. "Moderation is the key; I feel so strongly about that," Collins says. "Old Favorites with Gourmet Twists"

I absolutely love this casserole cookbook by Tiffany Collins. As a mother and step-mother of 3 very active children I need dinner ideas that are convenient and can be planned ahead. I love the recipes in this cookbook because it takes some of my old favorites but changes many of the ingredients to healthier options and/or gourmet substitutes. It also has tons of tips on freezing the casseroles so you always have one on hand. I would recommend it to all of my family and friends.

A Great Cookbook!

I grew up on different casseroles. Lately, I have not had the opportunity to have many casseroles, but this book will change all of that. As a parent of two I am always looking for ways to make our lives easier, especially when it comes to dinner and I know that casseroles will change that. These casseroles are so varied, and there are so many to choose from. I am particularly looking forward to the Reuben Casserole for one, but there are so many more that look amazing.

On top of the variety I loved that the recipes were filled with healthy ingredients and the book also gave a ton of tips and ideas regarding preparing and freezing what you make.

This book will give you a ton of ideas that you will help you to make some very creative meals for the whole family. You can truly tell that the author loves what she is doing and what she is sharing, and with all that you see and read you are drawn in and and are definitely motivated to start transforming your own family's eating habits!

The Gift of Casseroles

I have always loved cooking for my family and friends. This year I have realized what a gift a home cook meal can be. My mother-in-law was hospitalized for quite some time and other than going to visit as often as I could, there were times I felt completely helpless. I then realized what a gift I could provide to the family be making meals. And what better to transport and last for several meals than casseroles. 300 Best Casserole Recipes helped me with some creative ideas and provided healthy alternatives to comfort food. I have sinced gone back to this cookbook for many gifts that I can give to friends who have just had babies, moved to a new home, etc. and may not be able to cook as much. There is no better comfort than a good casserole and the love of family and friends!
